Pinch o’…bacon!


This is a quick snack of protein, fiber and yummy goodness!  I first had something similar while visiting a client in San Francisco and I’ve been trying to match the flavor ever since.  We were sitting pretty in the city by the bay, sipping trendy cocktails and munching on small plates when the waiter brought this delicious dish out to us.  I thought the combination sounded strange but man oh man was it something to remember!

Bacon Wrapped Dates stuffed with Blue Cheese – Here’s how I made it tonight:

3 strips low sodium bacon

6 Dole’s dried, pitted dates

Blue cheese crumbles

Honey

Preheat oven at 350 and lay the bacon (cut into 6 pieces) on wire racks on top of a baking sheet.  While the bacon starts to cook, stuff each of the dates with as much tangy blue cheese as you can fit.  Next wrap each date in a piece of bacon and place back in oven until each piece is cooked through.  Drizzle with honey and enjoy!

If you have more time, make brown sugar bacon to wrap the dates, it will really bring out the sweetness.
