Grill Season!

Grilled chicken, grilled carrots, warm potato salad

Oh how I’ve missed the!  Grilled chicken, carrots and warm potato salad were on plate for tonight and they all hit the spot.  I enjoyed the food the most but I think my husband most enjoyed the little to no clean up.

Grilled chicken – marinated in olive oil, red wine vinegar, garlic powder, dried mustard and s & p.

Carrots – I should have blanched them first but, oops, I forgot.  I rolled them in olive oil, s & p, dried thyme and honey and then put them out to char.  Once they were soft, I rolled them in a little butter and drizzled a bit more honey over them.

Potatoes – my favorite part of this dinner.  I used new potatoes and started by coating them in olive oil, salt and pepper and then tossed them whole onto the grill (nearing 400 degrees).  Grilled them until tender, pulled them off the grill, rough chopped them and added a tbspn butter.  Next I mixed together 1/2 cup greek yogurt, 1/4 cup grain mustard, tablespoon olive oil and 3 green onions and added the blend to the potatoes for a delicious NEW take on potato salad served warm.

Hope the propane tank is full…I feel many more outdoor dinners coming on this week.  Plates up!
